White Chocolate and Cranberry Cookies


Ingredients:

85g light/ dark brown sugar

230g granulated sugar

115g butter

315g plain flour

1 tsp bicarbonate of soda

1/2 tsp salt

1 egg

1 tsp vanilla extract

100g dried cranberries

100g white chocolate chips


Method:

  1. Preheat the oven to gas mark 5 and grease a few baking trays.

  2. Melt the butter on the hob or in the microwave. When the butter is fully melted, pour it into a bowl with the sugar and mix.

  3. Beat in the egg and vanilla extract until the mixture is smooth then stir in the flour, bicarbonate of soda and salt.

  4. Mix the chocolate chips and cranberries in (you may have to use your hands for this bit.

  5. Make small balls out of the mixture and lay them out on the trays about an inch apart (you could also use an ice cream scoop for this step if you find it easier to get them even that way).

  6. Put the trays into the oven and bake for 15-20 minutes, when they come out they should have a slightly cracked top and be more browned.

  7. When the cookies come out, leave them to harden for about 5 minutes on the trays then place them on a cooling rack for the rest of the time.


This is a really lovely recipe. The tangy, fruity flavour goes perfectly with the milky, sweetness of the white chocolate. It's just delicious. Of course, they aren't super healthy but with the berries, they are healthier than many other cookies.


There are a few things that are very important in the recipe and may need explaining. When the cookies go in, some space should be left on the baking trays between them so they can spread out as when they go in the oven they melt and. if they're too close, they will stick together. Another little thing is that when they come out they have to be left to cool on the tray for about 5 minutes before you take them off, this is because they need to harden slightly othewise they will crumble when you try to move them.


Obviously, if you don't like cranberries you could change them for another type of dried fruit- preferably a dried berry. You could also swap out the white chocolate chips for dark or milk if you wanted. These changes would just alter the flavour slightly but it's up to you what you choose to do with this recipe.
