Banana Bread Muffins

This is a delicious healthy snack which is perfect for taking for a lunch for school or work.

Ingredients:

76g butter

150g granulated sugar

3 very ripe bananas

1 large egg

1 tsp vanilla extract

204g plain flour

1 tsp bicarbonate of soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg


Method:

  1. Pre-heat the oven to gas mark 4 and melt the butter in a microwave (it will only need half a minute or so).

  2. In a mixing bowl, stir together the melted butter and sugar.

  3. Mash the bananas with a fork in a seperate bowl and add them to the butter and sugar then add the egg and vanilla extract and stir.

  4. Add the rest of the ingredients and mix until they are fully combined.

  5. Lay out about 12 muffin cases into a muffin tin (I use reuseable muffin cases) and spoon the same amount of the mixture into each case.

  6. Put them into the oven and bake for 20-25 minutes. When they come out they should be golden brown and when you put a skewer in, it should come out clean ( have no batter on it).


This recipe is so delicious and is perfect for when you have some really ripe bananas that you don't want to eat because for this recipe, the riper, the better. These muffins are perfect for you to take with you when you're out for the day and can easily be carried around covered with cling film or a wax wrap (wax wraps are more environmentally friendly than cling film and keep things fresh just as well).


Not only is this recipe easy, it is also healthier than most other muffins and cakes. It doesn't have as much sugar as many other similar recipes do as the natural sugar of the bananas keep it sweet. The bananas also add a lovely flavour, moisture and lots of nutrients including dietary fibre, potassium, magnesium, copper, manganese and vitamins C and B6. This means that from eating something tasty and sweet, you are getting some of the nutrients you need in your diet.


These muffins are delicious fresh out of the oven whilst they are still warm, it feels like a special treat. They can be stored in an airtight box and used during the week, or they can be put in the freezer and brought out the night before you want them to defrost them. The freezing doesn't effect the flavour but may just make them a little stickier -which in my opinion isn't a problem but you may want to be aware of.
