Overnight Pesto Pasta

This is a delicious, easy lunch to prepare in advance and leave for the next day.


Ingredients:

50g frozen peas

4 tsp pesto

175g pasta

Method:

  1. Fill a pan about half way with water and boil it.

  2. Once the water is boiled, add the dried pasta and simmer until it's cooked. To check if it is cooked, take a piece out and see how chewy it is- some people prefer it softer than others so just cook it the way you like it.

  3. Once the pasta is cooked, drain the water and put the pasta in a plastic lunch box.

  4. Add the pesto and frozen peas and stir, if you need you can put the lid on the tub and shake it up to mix it.

  5. Leave the pot to cool with the lid placed ontop but not fully on and put it in the fridge when it's cool enough.

  6. Leave the tub in the fridge overnight and take it out in the morning to take with you wherever you go that day.


This recipe is a super easy version of a meal I love! It takes very little time to make and is perfect for people looking for something to grab in the morning to take to school/ work with them. It's super healthy and will fill you up throughout the afternoon.


For this recipe, you could use different veg instead of the frozen peas or even just add them to this recipe- it is completely up to you. I use frozen peas because they melt overnight and don't take much prep the night before but you could always choose fresh peas over frozen. You could also choose to add more or less pesto to fit you well and if you don't like pesto, you can use a different herb paste for this dish. If you would like more protein, you could also add grated cheese to this dish.


Nutrition wise, the peas contain protein, dietary fibre and vitamins and minerals- vitamin C, folate and vitamin B1. The pasta contains Carbohydrate, dietary fibre, protein and vitamins and minerals- calcium, iron, thiamin, riboflavin, vitamin B6, niacin, magnesium, phosphorus, zinc and copper. The pesto contains protein, calcium, iron and vitamins A and C.
